It's summertime, well in some parts of the world anyway, and apart from barbecues a lot of us like to eat salads. Not just the boring green salads, be a little bit more adventurous.

How about some prawns, mango and a coconut dressing? Try it out and see what you think. As always, do listen to the programme for Heather's tips and more detailed instructions. It could be served as a main course or maybe you'd prefer to use it as a starter. This salad doesn't only taste good but is very pleasing to the eye as well.

Prawn and mango salad with coconut dressing:

2 cups cooked rice ( 2/3 cup dry rice)
1 kg cooked king prawns
1 lettuce
2 mangoes, peeled and sliced
1 avocado, peeled and sliced

for the dressing:
1/2 cup or 125 ml coconut milk/cream
1 tsp freshly grated ginger
2 tbsp lemon juice
2 tsp sugar
1/2 tsp curry powder
1/4 tsp turmeric

Shell the prawns. Put the lettuce and rice on a serving plate, top the rice with the prawns, mango and avocado. Put all the ingredients for the dressing in a jar (or liquidiser) and shake well. Pour over the top of the prawns, mango and avocado. For more serving suggestions please listen to the programme.
